Hello friend!

Are you running out of ideas of what to make for dinner?  We can totally relate!

 

With such a lengthy time at home, our families have seemed to run through, and grow bored of, all of our regular rotation of dinners.  We've even dusted off some old recipe cards, just to find something new.

Then we had a brilliant idea!  Why don't we recipe swap?!

Then we had an even better idea!  How about try some new recipes from our beloved guests!

So here it is, friend.  An ever growing page dedicated to trying new things.  Feel free to jot these recipes down and give them a try.

Easy Shepard's Pie

An easy, tasty dish my entire family loves!  This recipe feed our family of five with plenty of left overs.

Ingredients

  • 1 1/2 lbs ground beef

  • 6-8 large potatoes

  • 1 medium onion

  • 1 cup milk

  • 1/2 stick butter

  • 3 cups frozen mixed veggies (peas, corn, carrots, green beans)

  • 1 can Bushes Baked Beans

Instructions

  1. Heat oven to 350 degrees.

  2. Wash, chop and boil potatoes in preparation to make mashed potatoes.

  3. Brown ground beef in a pan. 

  4. Chop and add onions to beef to saute' slightly.

  5. When ground beef is browned, drain grease if needed then dump into 13 x 9 casserole dish.

  6. Layer frozen veggies on top of ground beef.

  7. Layer a can of Bushes Baked Beans.

  8. Drain potatoes, add milk and butter and mash.

  9. Cover beef, veggies and beans with a nice, thick layer of mashed potatoes.  Feel free to sprinkle shredded cheese on top!

  10. Bake in oven for 15-20 minutes of until everything is heated through.

This is our comfort food! Enjoy!

Tater Tot Casserole

My family loves this quick, easy casserole dish all year long!

Ingredients

  • 1 1/3 - 1 1/5 lbs ground beef

  • 2+ cups frozen mixed veggies

  • 1 can of Cream of Mushroom soup (we also like Cream of Bacon soup)

  • 1 can milk (fill empty Cream of Mushroom soup with milk for measurement)

  • Frozen tater tots

Instructions

  1. Heat oven to 350 degrees.

  2. Brown ground beef in a pan until cooked.

  3. Mix together Cream of Mushroom soup with a can of milk.

  4. In a 13 x 9 casserole pan add browned ground beef and frozen veggies.

  5. Pour soup on top of beef and veggies.

  6. Cover casserole dish with a layer of frozen tater tots. 

  7. Optional: sprinkle top with shredded cheese.

  8. Bake until tater tots are golden brown.

Kale Soup

This soup is inspired by my Portuguese family roots.  My family makes this soup with Chaurice sausage that is easily found where they live on Cape Cod, MA.  Since that is not easy to find here at home, I use chorizo and my children and husband love it!

Ingredients

  • 1 package chorizo (I use mild)

  • 1 onion, chopped

  • 3-5 red potatoes

  • 2 tbsp olive oil

  • 1 tbsp flour

  • 3 -5 garlic cloves, depending on preference

  • 1 can kidney or black beans

  • 32 oz beef broth (I have also used chicken broth)

  • 1 bag / bunch of kale

Instructions

  1. I use my Instant Pot, but stove top or slow cooker work great.

  2. Brown chorizo and onions.  Add to pot.

  3. Chop and add potatoes and kale.

  4. Add crushed garlic cloves.

  5. Add beans.

  6. Cove ingredients with broth.  I add water if needed.

  7. Stir in olive oil and flour.  Add salt and pepper to taste.

Cook until ready and enjoy!

Grilled Chicken Breast and Oven Roasted Brussel Sprouts

This is a healthy, easy recipe my entire family loves!

Ingredients

  • Chicken Breasts (enough for your family)

  • Brussel Sprouts

  • Garlic cloves

  • Olive oil

Instructions

  1. Grill chicken breasts until done.

  2. Preheat oven to 425 degrees.

  3. Place brussel sprouts and garlic onto baking sheet.

  4. Drizzle olive oil over vegetables.

  5. Salt and pepper to taste.

  6. Bake about 20 minutes.

Sausage and Cabbage Skillet

My family loves this quick and flavorful dish!  We sometimes add shrimp for a fun twist!  We like to cook this in a cast iron pan or a wok style / shape pan.

Ingredients

  • ​1 package smoked sausage

  • 1 small head of cabbage

  • frozen mixed veggies (pea, corn, carrot mix)

  • 4-7 red potatoes

  • 1 onion

Instructions

  1. Drizzle a small amount of high heat oil such as olive oil or avocado oil.

  2. Chop onions and saute'.

  3. Add in sliced smoke sausage.

  4. Once onions and sausage begin browning, chops and add in red potatoes.

  5. Cover and let cook on medium heat for about 10 minutes, mixing occasionally.

  6. Add frozen veggies and top with chopped cabbage.  Sprinkle with salt and pepper to taste.

  7. Cover and cook for about 10 minutes, mixing occasionally.

Spaghetti and Sausage

This fun tip will be sure to jazz up your next spaghetti night rotation!

Ingredients

  • Package spaghetti noodles of choice

  • Spaghetti sauce of choice

  • 1 package smoked sausage

Instructions

  1. Prepare spaghetti noodles as instructed.

  2. Chop and cook sausage.

  3. Add sauce to cooked sausage.

This is such an easy way for us to reinvent spaghetti night at home!  Enjoy!
